WALNUT CAKE, my favourite one...


Walnut Cake



C A K E


• 3 cups and a bit of plain flour
• nearly full cup of sugar
• 200 g butter
• 2 tbsp milk
• 2 eggs
• 2 tbsp honey
• 1.5 tsp baking soda
• 300 grams of walnuts (1.75 cup)

  Mix the butter, sugar, milk and honey in a pan over a low heat until melted, then set aside to cool.
  Sift the flour into a bowl; whisk the egg, then pour into the flour and add the baking soda.
  Combine the two mixtures and knead everything together.
Divide the mixture in half and place in 2 well-greased shallow baking trays.
  Add walnuts to one half by pressing them into the top of the cake.
  Ø   i always add walnuts on both halves, because i love them.
Bake for about 15 minutes at 200 ° until golden.

Leave covered for about 3-4 days, to allow the cake to soften.



C R E A M


• 1 1/2 cups milk (375 ml)
• 1/2 cup sugar (100 g)
• 2 tbsp flour
• 2 tbsp cornstarch
• 2 vanilla sugar / extract (    tbsp)
• 1 whole block of butter (250 g)

  Stir 1 cup of milk with the sugar and vanilla sugar / extract in a pan and bring to the boil.
Mix the flour, cornstarch and remaining milk, then add this to the boiling milk (the milk has to rise before adding the mixture), stirring until thickened.
Allow to cool, then add the butter and mix together.

  Spread the cream over the bottom of one of the cake halvesand sandwich the second half on top (ensuring the walnuts are on the top one).
Spread over the chocolate sauce, leave aside to set.
  Ø  i mix the icing sugar with dark cocoa powder or nesquick chocolate flavour powder together with water to make the chocolate sauce.
